BREAKING CHANGE: document-merge-service now uses Gunicorn as its app server instead of uWSGI. If you are using a custom uWSGI configuration via the `UWSGI_INI` env variable, replace it with a custom Gunicorn configuration as explained in [the documentation](README.md#custom-gunicorn-configuration).
