The previous version of PyYAML was not compatible with Python 3.10. Update the packages and include the tests for that Python version. Signed-off-by: Jose Javier Merchante <[email protected]>

This PR updates the version of PyYAML to be compatible with Python 3.10 and removes the support of Python 3.7.
