consider moving mentoring to content/mentoring rather than data

There would be some benefits to this, like being able to use page bundled images, rather than having people place them in assets.
and it would mean copying a markdown and edit yamls, rather than jsons, which I think more people are comfortable with?

In theory, there are very minor adjustments needed to make this change, which I think would be much easier for the @rladies/mentoring team to contribute t.
