Develop actionable plan to improve our documentation

Once we have identified what we have and what we're missing, as well as our guidelines for what we should and shouldn't include, we can make a plan to improve our documentation.

To complete this card, we should

• Identify and document required steps/processes for updating the documentation
• Write a GitHub project with actionable tasks to improve the documentation
• Assign complexity to actionable tasks, with the goal of identifying easy wins and longer-term commitments
