I was surprised to see that subscribe and unsubscribe are not listed as operation names in the messaging spans doc, especially when the higher level doc pointing to it mentions them in the general trace doc. Should those be listed as known conventions there?

The semantic conventions for messaging spans take a message-centric view, trying to model the lifetime of a message in a trace (or a set of traces), from production to consumption and settlement.
Subscribing or unsubscribing are actions that can't be directly related to a single message, and thus weren't in our focus. However, there's definitely a possibility to discuss and add additional operations, but likely after an initial stable release of messaging semantic conventions, which is our current focus.
