When I was looking before, I could not find a documentation page for how to run a Mondo Ingest release. Maybe add one?

This should contain all the steps to run a release, maybe a link to the SOP doc and a note that the ODK versions now need to be manually incremented. We also have not produced versioned releases (https://github.com/monarch-initiative/mondo-ingest/releases) for a long time, maybe we should get back to that!

Probably a good idea. Since mondo-ingest is very dev'y, the README.md might suffice, but I think docs elsewhere is not a bad idea.

Currently the README.md just says:
sh run.sh make build-mondo-ingest

The SOP (tentatively just an issue) you refer to is the following. Mostly it is about workflow for feature branches, but it also has some guidance for releases:
