Project management: issue labels harmonised with the Cloud Agent

In order to be production ready, the labels that will be used for issue triage need to be inline with the eco-system.

This ticket is to track this work is completed for v1.0.0 milestone.

The idea is to use the labels defined in this repo: https://github.com/hyperledger-labs/open-enterprise-agent/labels :
Components: not sure if we need to have them all or only have the mediator one:

Type: those are the ones to use: we should add those on top of the existing default labels in a first step:

At least those three will be immediately duplicated.

As I did some findings before my holidays in July 2024, I need to review where I was and start from there. I would propose this issue is not blocking the mediator v1.0.0 milestone. So just remove it from the milestone for now.
