Creation of a Gradle plugin of an Gradle plugin, will enable an integration of the workflow of building the services and the documentation

Sure, and a maven plugin has been mentioned to me too. I'm happy to provide, PR welcome too if you'd like to work on it.

Not sure when I'll get round to this but in the meantime the jar is enabled to run with java -jar (see README.md )so in the maven world you can use exec-maven-plugin. There will of course be something similar for Gradle.
