make eo:cloud_cover filter in ep5 not part of the challenge

this part is too difficult to expect learners to be able to find on their own via google, given the docs are hard to fine in pystac_client or the stac query extension docs. we should probably just give them the answer here and point them on where to learn more to these docs.
