Init snap fails to create log file

ERROR: ubuntu_init: Logging to /var/log/installer/ubuntu_init.log failed (Cannot create link)

Seems like we don't have permission to write to /var/log/installer despite using the system-files interfaces.

[d-loose]

/var/log/installer is only writable by root and the adm group, which gnome-initial-setup doesn't belong to, so it seems like we can't easily write our log files there. The logs are still accessible through the journal though.
