Tagging releases/docker image

I was using an older docker image and had backups working but some time in the past few years one of the updates broke it for me and my old macs. It'd be really helpful if you tagged releases and the docker image so I could use a specific old image instead of 'latest'. On docker.io the only tag is 'latest', there's no earlier docker images.
